Banana bread

Quarantine wouldn’t be quarantine if you haven’t made banana bread yet. An absolute staple and even better when it’s only 193 calories per piece! This recipe makes around 12 slices.

INGREDIENTS
5 tbsp unsalted butter
170g honey
250g whole wheat flour or all-purpose flour
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
2 eggs
3 ripe bananas
Topping:
50g icing sugar

METHOD

1) Preheat oven to 180•c and spray a loaf tin with cooking spray. Lay a sheet of parchment paper across the bottom and sides.

2) Melt the butter, add the honey and mashed banana to a bowl. Whisk till combined. Whisk eggs in.

3) Add baking soda, salt, cinnamon and vanilla to the bowl. Whisk until combined.

4) Add the flour and mix until combined.

5) Transfer to tin and bake for 40-50 minutes. Until a inserted knife in the centre of the bread comes out clean.

6) Leave bread to cool in the tin and transfer it to a wire rack.

7) Once cooled, mix icing sugar with 3 tsp water. Drizzle over the banana bread. I then added little pieces of honeycomb (optional).
