An absolute Mexican treat, with no meat involved. Delicious and minimal ingredients needed for this lunch/ dinner idea. This recipe serves 1. 330 calories for everything.
INGREDIENTS
1/4 can Black beans
45g corn
Tbsp salsa
1/2 tsp taco seasoning
Pinch of chopped coriander
Tbsp grated cheese
2 whole meal tortillas
METHOD
1) In a medium bowl, mix together beans, corn, salsa, taco seasoning and coriander.
2) Preheat a large skillet over medium to low heat, sprayed with low calorie cooking spray.
3) Place one tortilla on the skillet, and spoon the mixture onto the tortilla and spread evenly. Sprinkle the cheese over the bean mixture and place the second tortilla over the top of the cheese.
4) Press down on top of the tortilla lightly with the back of the spatula, so you can melt the tortillas together as the cheese melts.
5) When the bottom tortilla begins to brown, flip the quesadilla over until both tortillas are lightly browned. Cut into wedges if desired. Enjoy!
