This recipe yields 12 slices and 280 calories per slice. I am a cheesecake lover and it still feels like a cheesecake with the cream cheese replacement of Greek yoghurt.
INGREDIENTS
300g Rich tea biscuits
150g Light unsalted butter
125g Icing sugar
1 tsp Vanilla extract
300ml Light double cream
3 tbsp Skinny syrup caramel syrup (zero calories)
3 tbsp Biscoff spread
300g Fat free greek yoghurt
METHOD
1) Blend the biscuits until a fine crumb is formed. Mix the crumb with the melted butter until all combined.
2) Press the mixture into your selected tin, to make a compact base of biscuit mixture.
3) In a separate bowl blend the Greek yoghurt and icing sugar. Once all combined mix in the vanilla extract, caramel syrup and 1 tbsp melted biscoff spread. Finally add the cream and blend.
4) Once all combined and thickened, place mixture into the tin and space out.
5) Place into the fridge for around 5-6 hours to firm up. To finish melt 2 tbsp biscoff spread and drizzle on the top. Enjoy 😃
