This recipe makes 10 pancakes, 50 calories for each pancake. With added extras came to 327 calories for 4 pancakes. Made this the other day for brunch and forgot to post. Such a good recipe, for a pancake craving all day long.
INGREDIENTS
120 g Oat flour
120g Blended oats
30g all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ tsp cinnamon
3 tbsp granulated sugar
200 g fat free vanilla Greek yogurt
1 tsp vanilla extract
2 eggs lightly beaten
1-2 Tbsp unsweetened almond milk (or skimmed milk)
Frylight spray
Toppings:
1 tbsp melted Nutella
1/2 banana
2 chopped strawberries
12g light spray cream
METHOD
1) In a large bowl mix together the Greek yogurt, eggs and vanilla extract. Whisk until smooth.
2) Add sugar, oat flour, all-purpose flour, baking powder, baking soda, salt and cinnamon another bowl. Whisk until combined.
3) If the batter is too thick, add milk until desired consistency is reached.
4) Spray frylight on frying pan and fry pancakes until golden brown on both sides. The batter mixture should make around 10 pancakes.
5) Top with desired toppings. I topped with melted Nutella, banana, strawberries and light spray cream.
