Sticky ginger loaf cake

Gorgeous moist ginger loaf cake. Only 150 calories per piece and around 8 slices yield. Gorgeous cake for a summers day. Not to heavy, very easy to make and delicious. Even better only 150 calories per piece. Save recipe for later, you will not be disappointed

INGREDIENTS

140g whole wheat flour
1 tbsp ginger
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
250g unsweetened applesauce
170g light honey + more for glazing
3 tbsp coconut oil
1 tsp vanilla extract
Low cal Cooking spray

METHOD

1) Preheat oven to 190•c, line 9×5 loaf tin with baking paper and spray with cooking spray. In a medium bowl, add flour, ginger, cinnamon, nutmeg, baking powder + soda, and salt; whisk till all combined.

2) In another medium bowl, whisk eggs for 10 seconds. Add applesauce, honey, oil and vanilla; whisk until mixed well. Pour into a bowl with dry ingredients and mix gently, just enough to combine or until you see no more white flour pockets.

3) Pour into prepared loaf pan and bake for 45 minutes or until toothpick inserted comes out clean. Remove from the oven, let cool for 5 minutes and transfer to a cooling rack to cool off.
4) Drizzling small amounts of honey on top to finish. Then cut into desired amount of slices. Enjoy😁
