Tzatziki and hummus to serve with a dish

Tzatziki (Serves 8): 18 calories per serving (30g)

INGREDIENTS

8 oz fat-free Greek yogurt
1 cucumber, peeled and grated
2 cloves of garlic, crushed
1 tsp lemon juice
1 tbsp fresh dill, chopped
1 tbsp fresh chives, chopped
salt and fresh pepper

METHOD

1) Deseed the cucumber with a spoon. Place cucumber in a food processor or grate. Sprinkle with a little salt (this helps release the liquid).

2) Combine the cucumber, garlic, yogurt, salt, pepper, lemon juice, dill, chives and place in the fridge for at least 1 hour before serving.

3) Then serve.

Hummus (serves 10): 65 calories per serving (2 tbsp)

INGREDIENTS

1 can chickpeas beans drained and rinsed
2 to 4 tbsp water to loose up
2 tbsp extra virgin olive oil
1 tbsp lemon juice
1 garlic clove minced
3/4 tsp ground cumin
1/2 tsp salt

METHOD

1) Blend all ingredients together in a food processor. Keep adding the water gradually to achieve your desired consistency.

2) Then serve.

I served with low-fat grated cheese, onion and mushroom fried mix (with frylight), wraps, thin breads, chicken kebabs and a salad.
